Make this year’s Green Monday special by treating you and your family with a delicious Mediterranean recipe. Accompany your pasta with the aromatic zivania of Oenou Yi – Ktima Vassiliades.


Ingredients:

  • 1 package of spaghetti
  • 800 gr. of prawns
  • 2 lemons
  • 2-3 garlic cloves
  • 1 small bunch of basil
  • freshly ground pepper
  • coarse salt
  • olive oil

Preparation:

  1. Carefully remove the shell and head of the prawns. Since the heads contain so much flavor, place them into a pot with 400 ml. of water along with 1 clove of garlic and let them boil for about 15 minutes. Next, pass the broth through a sieve while pressing the prawns’ heads well and try not to let the broth cool.
  2. Boil the spaghetti in salted water for 9 minutes until it becomes “al dente”. In the meantime, grate the 2 lemons to get fresh lemon zest, finely chop the basil and put them in a bowl together.
  3. Pick out a large pan and pour 2-3 spoons of olive oil together with the two cloves of garlic. Once the oil is hot, remove the garlic and sauté the shrimps for about 2 minutes on each side. Add salt and pepper, basil, lemon zest and reduce it with a shot zivania. Once it evaporates, add lemon juice by utilizing the lemons used for the zest.
  4. Lastly, remove the prawns and in the same pan add the spaghetti directly from the pot and increase the temperature. Add the broth and mix gently. The sauce will thicken due to the starch released from the spaghetti! When the sauce is reduced, sprinkle with basil and freshly ground pepper.
  5. Enjoy your shrimp pasta by pairing it with a bottle of zivania of Oenou YI – Ktima Vassiliades.
