Oenou Yi-Ktima Vassiliades’ new Thaleró Red pairs perfectly with sweet muffins and chocolate tarts. So, we combined the two of them in a single dessert and we present to you the most delicious double chocolate muffins. Bake them to indulge in chocolate and wine goodness!
Ingredients:
Muffins:
- 100gr all-purpose flour
- 40gr unsweetened natural cocoa powder
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs, at room temperature
- 100gr granulated sugar
- 100gr packed light brown sugar
- 80ml vegetable or canola oil or melted coconut oil
- 2 tsps pure vanilla extract
- 120ml full fat milk, at room temperature
Chocolate frosting:
- 230gr unsalted butter, softened to room temperature
- 420gr confectioners’ sugar
- 40gr unsweetened cocoa powder
- 3 tbsps heavy cream or milk
- 1/8 tsp. salt
- 2 tsps pure vanilla extract
To serve:
- Chocolate sprinkles
Preparation:
- Preheat the oven to 180°C. Line a 12-cup muffin pan with cupcake liners. Set aside.
- Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a large bowl until thoroughly combined. Set aside.
- In a medium bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla together until combined.
- Pour half of the wet ingredients into the dry ingredients. Then half of the full fat milk. Gently whisk for a few seconds. Then add the rest of the wet ingredients and milk. Stir until just combined; do not overmix. The batter will be thin.
- Pour the batter into the liners. Fill only halfway.
- Bake for 20 minutes. Allow to cool completely before frosting.
- While waiting for the muffins to cool, make the chocolate frosting. With a mixer, beat the butter on medium speed until creamy – about 2 minutes. Add confectioners’ sugar, cocoa powder, heavy cream, salt, and vanilla extract. Beat on low speed for 30 seconds, then increase to high speed and beat for 1 full minute.
- Pour the frosting in a piping bag and frost the muffins. Top with chocolate sprinkles and serve with a glass of Thaleró Red by Oenou Yi-Ktima Vassiliades!
