Traditional amatriciana spaghetti with tomato sauce and bacon; an easy dish to make for a memorable meal to be enjoyed with your significant other. It pairs perfectly with a glass of Oenou Yi – Ktima Vassiliades’ premium red wine Geróklima.
Ingredients:
- 1 package of spaghetti
 - 3-4 pieces of diced pancetta or bacon
 - 1 onion
 - 5-6 ripe tomatoes
 - 200 gr. lightly spiced, unsalted pecorino cheese
 - 1 tsp hot chili or chili flakes
 - Salt
 - Freshly ground pepper
 - ½ cup of olive oil
 
Preparation:
- Heat the olive oil and sauté the diced pancetta or bacon.
 - Place them on a plate with absorbent paper.
 - Fry the chopped onion until it turns golden-brown and add the chili flakes or hot chili.
 - Add the tomatoes, season with salt and pepper and then add the pancetta while leaving the sauce to thicken.
 - Boil the spaghetti and a few minutes before it becomes al dente, add a cup of boiled water to the sauce.
 - Drain the spaghetti and add it to the sauce. Garnish with grated pecorino and serve it next to a glass of Oenou Yi – Ktima Vassiliades’ finest red wine Geróklima for the ultimate food pairing!
