This is a wonderful and tasty seafood risotto recipe that will definitely excite you. The occasion requires good wine, which is why Rodámbelo from the wine cellar of Oenou Yi – Ktima Vassiliades is perfect for this dish!
Ingredients:
- 2 cups arborio rice
- 1L vegetable broth
- 150gr. shrimp, peeled and cleaned
- 150gr. squid, cleaned and sliced
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 100ml olive oil
- 200ml Playiá White Dry
- 100gr. butter or margarine
- 2 tbsps chopped parsley
- salt and pepper
Preparation:
- Heat the broth over low heat. Remove from heat and keep warm.
- In a deep frying pan, sauté the garlic in 1 tbsp. olive oil for 2-3 minutes. Remove from heat.
- Add the squid and shrimp to the pan and sauté for 2-3 minutes.
- Add half the wine and simmer for 3-5 minutes. Remove from the pan and set aside.
- Sauté the onion in 1-2 tbsps olive oil until it withers.
- Add the rice and leave for 4 minutes. Stir to coat with oil.
- Add the rest of the wine and wait for the alcohol to evaporate.
- Add a portion of the broth to pan with a spoon and stir until the liquids are absorbed. Repeat the process for 30 minutes using all the broth until the rice is cooked.
- Before serving, add the shrimp and squid and season with salt and pepper.
- Remove from the heat and mix with 2 tbsps butter or margarine, the remaining olive oil and parsley.
- Cover the pan and leave the risotto to set for 3-5 minutes before serving.
- Serve it next to a glass of Rodámbelo by Oenou Yi – Ktima Vassiliades!
