Ingredients:
- 1 cup cooked quinoa
- 2 bunches spinach, washed and cut
- 1 avocado, cut in bite-sized pieces
- 15 strawberries, washed and cut in quarters
- almonds or sunflower seeds
- feta or goat cheese or fresh anari cheese, optional and according to preference
For the dressing:
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- ½ tsp. mustard
- ½ tsp. honey
- lemon zest, optional
- salt and pepper, optional
Preparation:
- Cook the quinoa according to package instructions and let cool.
- Put quinoa with all salad ingredients in a bowl and mix.
- Prepare the dressing by combining all ingredients together.
