Enjoy this light and refreshing dish, adding feta or goat cheese, or even some fresh anari cheese, as a main dish, along with a glass of Playia Rosé Dry from Oenou Yi – Ktima Vassiliades and let your senses travel to a blue sea or a green mountain.


Ingredients:

  • 1 cup cooked quinoa
  • 2 bunches spinach, washed and cut
  • 1 avocado, cut in bite-sized pieces
  • 15 strawberries, washed and cut in quarters
  • almonds or sunflower seeds
  • feta or goat cheese or fresh anari cheese, optional and according to preference

For the dressing:

  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • ½ tsp. mustard
  • ½ tsp. honey
  • lemon zest, optional
  • salt and pepper, optional

Preparation:

  1. Cook the quinoa according to package instructions and let cool.
  2. Put quinoa with all salad ingredients in a bowl and mix.
  3. Prepare the dressing by combining all ingredients together.
  4. Pour the dressing over the salad, open up a bottle of Playia Rosé Dry from Oenou Yi – Ktima Vassiliades and enjoy!
