This pear tart recipe uses fresh pears and a few pantry staples to make a sweet, fruity, deliciously simple dessert completely from scratch. A simple, frugal, tasty way to use up some pears when they’re abundant and in season! Just open up a bottle of Thaleró by Oenou Yi-Ktima Vassiliades to complement this elegant dessert and enjoy!
Ingredients:
Crust:
- 3 tbs butter, softened
- ½ cup sugar
- ¾ tsp. ground cinnamon
- ¾ cup all-purpose flour
- 1/3 cup finely chopped walnuts
Filling:
- 225gr cream cheese
- ¼ cup plus 1 tablespoon sugar, divided
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 450gr fresh pears, thinly sliced
- ¼ tsp ground cinnamon
Preparation:
- Preheat oven to 220°C.
- Beat the butter, sugar and cinnamon until crumbly. Beat in the flour and walnuts.
- Press onto bottom and up sides of a 23cm tart pan with a removable bottom coated with cooking spray.
- For the filling, beat the cream cheese and ¼ cup sugar until smooth. Beat in the egg and vanilla.
- Spread the filling into the crust and arrange the pears over the top.
- Mix the cinnamon and remaining sugar and sprinkle over the pears.
- Bake for 10 minutes then reduce oven setting to 170°C and bake until the filling is set, about 15-20 minutes.
- Cool for one hour on a wire rack and refrigerate at least two hours before serving next to a glass of Thaleró by Oenou Yi-Ktima Vassiliades!
