A Greek style lemon and herbs marinated roast lamb with lemon roast potatoes, that is perfect for a special dinner. Enjoy with a glass of Geroklima by “Oenou Yi – Ktima Vassiliades”.
Ingredients:
- 1 kg of lamb
- 1 kg potatoes
- 250 g water
For the marinade
- 2 tablespoons mustard
- 2 tablespoons honey
- zest and juice from 2 lemons
- 3-4 sprigs of rosemary
- 3 cloves of garlic
- 4 tablespoons olive oil
- salt & pepper
- 2 tablespoons oregano
Preparation:
- Preheat oven to 170°C.
- Cut the potatoes and add them into a baking pan. Place the lamb on top of them.
- Mix in a blender the mustard, honey, lemon zest and juice, rosemary leaves, garlic, olive oil, salt, pepper, oregano, and beat well until the ingredients are dissolved.
- Spread the marinade over the lamb and the potatoes.
- Add the water into the baking pan, and cover with parchment paper and aluminum foil.
- Roast for 3 hours. Then, uncover the baking pan and roast for 30-40 minutes until golden and enjoy with a glass of Geroklima by “Oenou Yi – Ktima Vassiliades”.
