If cooking lamb sounds a real task, then this is the recipe to get started. Surprisingly easy, but full of intense flavours and complex aromas, it is ideal for a red wine like Red Melody from ‘Oenou Yi – Ktima Vassiliades’.
Ingredients:
- 4 tbsp. butter
- 2 onions, finely chopped
- 500 gr. lamb, cut into cubes
- 2-3 garlic clove, finely chopped
- 3 ripe tomatoes, grated
- 1 cinnamon stick
- 2-3 allspice grains
- 2 cups rice
- 3 cups vegetable or meat broth, hot
- salt and pepper
For serving:
- Sheep yogurt
- Parsley, finely chopped
- Freshly ground pepper
Preparation:
- Heat the butter in a saucepan and sauté the onion until it softens.
- Add the meat and let it brown slightly.
- Add the garlic, the grated tomatoes, salt, pepper, cinnamon and allspice.
- Stir for a while and then add hot water to cover the food.
- Cook for about 10 minutes and then add the rice, along with the broth.
- Boil for about 15 minutes, stirring often to prevent sticking. If necessary, add extra water.
- When all liquids have been absorbed, the food is ready. Serve it while hot, sprinkled with parsley, a tablespoon of sheep yogurt, freshly ground pepper and of course a glass of Red Melody from ‘Oenou Yi – Ktima Vassiliades’ for an incredible combination of flavours!
