A traditional oriental meze! And nothing accompanies these dishes better than Zivania by Oenou Yi-Ktima Vassiliades!
Ingredients:
- 1 kg of pork, cut into cubes
- 100 ml olive oil
- Salt & pepper
- 2 onions, sliced
- 3 garlic cloves, minced
- 1 Florina pepper, cut into large cubes
- 1 yellow bell pepper, cut into large cubes
- 400 gr. chopped tomatoes
- 1.5 tsp. smoked paprika
- 1 tbsp. dried oregano
- 3 sprigs of rosemary, finely chopped
Preparation:
- Preheat the oven to 180°C/air
- Put the pork in a bowl together with the olive oil and season with salt and pepper.
- Place a large deep saucepan over high heat. Once warm, sauté the pork in portions very well on all sides, until it browns. Transfer to a bowl.
- In the same saucepan add the onions, garlic, peppers and tomato and sauté for 2 minutes.
- Remove the pot from the heat.
- In an ovenproof casserole place the pork and the mixture with the onion, the garlic, the peppers and the tomato. Season with salt and pepper and add the paprika, oregano and rosemary. Mix with a spoon and close the hull well.
- Bake for 2.5 hours.
- Once the gulbasi is ready, serve it hot next to our favourite Oenou Yi Zivania!
