The ‘grill’ may sound like a difficult process, but this particular recipe comes to reassure you of the exact opposite! So, light your fire and make the easiest recipe for grilled sea bream, with everyone’s favourite, potato fries. Oenou Yi-Ktima Vassiliades suggests that you accompany your meal with one of the new arrivals of the winery; open a bottle of the white wine Alba Dómina, created from the unique Cypriot indigenous variety Promara and enjoy!


Ingredients:

For the sea bream:

  • 2 large sea breams, cleaned
  • 3 tbsps olive oil
  • salt & pepper

For the potatoes:

  • 2 potatoes, cut into slices
  • ½ cup olive oil for frying

To serve:

  • fresh rosemary
  • 1 lemon, sliced

Preparation:

  1. Light the fire and let the grill heat well.
  2. While you wait, carve the sea breams with a knife on each side. Brush them with olive oil on both sides and season them with salt and pepper.
  3. Place them on the grill and let them cook for up to 10 minutes on each side.
  4. While the sea bream is cooking, pour the olive oil in a large pan and let it heat on high heat.
  5. Add the potatoes to the pan and fry until cooked, stirring occasionally. With a slotted spoon.
  6. Transfer the potatoes into a plate with absorbent paper towels and season them with salt.
  7. Serve the potatoes and sea bream with fresh rosemary and lemon slices, next to a glass of Alba Dómina, Oenou Yi-Ktima Vassiliades’ new addition, for the perfect food pairing!
