A delicious dish for feasts. Enjoy with a glass of Reserve Chardonnay by “Oenou Yi – Ktima Vassiliades”. Duck A L’Orange is one of the best known and loved dishes of French classic cuisine.
Ingredients:
- 1 duck (2kg or more)
- 2 tsp salt
- freshly ground pepper
- 3 tbps sugar
- 1/4 cup red wine vinegar
- 1 cup chicken broth
- 1 onion
- juice from 4 sweet oranges
Preparation:
- Preheat oven to 160°C.
- Wash the duck and dry it thoroughly. With a sharp knife cut the skin of the duck.
- Season with salt and pepper and roast for 2 hours and 30 minutes.
- Slice the onion and add it to a pot with the sugar. Mix until the onion turns golden and caramelises nicely. Then add the vinegar.
- Add the orange juice and the chicken broth, mix well and allow the liquids to evaporate and the sauce to thicken.
- Sieve the sauce into a bowl and remove the onions.
- Season with salt and pepper and serve the duck with the orange sauce. Enjoy this lovely dish with a glass of Reserve Chardonnay by “Oenou Yi – Ktima Vassiliades”.
