This Green Fig Salad with Goat Cheese and dakos rusks is a beautiful and well choice best served with a glass of Playia Rose Dry from “Oenou Yi – Ktima Vassiliades”.
Ingredients:
For salad
- 1 green apple
- 1 pear
- 2 tbsp balsamic vinegar
- 100g dried figs
- 2 tbsp olive oil
- 50g dakos rusks
- salt and pepper
- 200g mixed greens
- 250g goat’s cheese
For serving
- 50g walnuts
- 2 tbsp balsamic vinegar
- 1 tbsp honey
Preparation:
For the salad
- Cut the green apple and pear into thin slices and place in a bowl.
- Add the balsamic vinegar and mix.
- Cut the dried figs into large pieces and add to the bowl.
- Add the olive oil, dakos rusks, cut into pieces and season with salt and pepper. Toss to combine.
- Add the green salad and goat cheese, cut into pieces. Mix thoroughly.
For serving
- Place a pan over high heat.
- Add the walnuts.
- Add the balsamic vinegar and honey and mix, allowing the walnuts to caramelise for 2-3 minutes.
- When ready, remove from heat and allow to cool.
- Add the caramelized walnuts to the salad and serve next to a glass of Playia Rose Dry from “Oenou Yi – Ktima Vassiliades”.
