Prepare the healthiest and most delicious salad with black eyed peas, broccoli, tomato and herbs. Accompany it with a glass of Playia White Dry wine from Oenou Yi – Ktima Vassiliades to enjoy its flavours and aromas to the maximum!
Ingredients:
- 250 gr. boiled black eyed peas
- 1 tomato, finely chopped
- 1 medium head of broccoli
- 1 small onion, finely chopped
- 1 red pepper, finely chopped
- 4 tbsp. olive oil
- 4 tbsp. balsamic vinegar
- salt and pepper
- 3 tbsp. fresh parsley
Preparation:
- Wash the broccoli well, divide it into small florets and boil it in lightly salted water for 5-7 minutes (be careful not to over-boil).
- In a saucepan with boiling water, add the beans and let them cook for 30-40 minutes.
- Drain and leave to cool. Put them in a salad bowl.
- Add the onion, tomato, pepper and broccoli florets.
- Mix the oil and vinegar with salt and pepper, pour over the salad and stir. Sprinkle with plenty of parsley.
