A wonderful quiche with easy, homemade dough with ingredients already found in your home. Its delicious, full of flavour, filling makes it ideal as an appetiser, but also as a main course, if accompanied by a green, crunchy salad. Ingredients:
For the dough
- 200gr. flour
- 100gr. unsalted butter, at room temperature, diced
- 1 egg
- 1-2 tablespoons cold water
For the filling
- 300gr. spinach
- 1 onion, finely chopped
- 1 spring onion, finely chopped
- 2 tbsp. olive oil
- 1 cup feta cheese, coarsely grated
- ½ cup gouda, grated
- ½ cup emmental, grated
- 1 cup fresh cream
- 2 eggs
- 5 cherry tomatoes, halved
- Fresh dill, mint and basil, chopped
- Salt and pepper
Preparation:
- Place the flour on a flat surface.
- In the middle, add the egg, water and butter.
- First blend the ingredients using your fingers and then knead until the ingredients are combined.
- Make the dough into a ball, wrap it in clingfilm and let it rest in the fridge for 30 minutes.
- Preheat the oven to 200°C.
- Roll the dough into a 0.5 cm thick circle and place it in tart form, cutting off any excess.
- Cover the base of the tart with parchment paper, place a few raw beans (to weight the dough down) and bake for 15 minutes.
- While the tart is baking, sauté the onions in a non-stick pan with the olive oil.
- Then add the spinach, salt and pepper and continue sautéing until all the liquid is completely absorbed.
- Remove from the heat and add the cheeses and dill, mint and basil to the mixture.
- Beat the eggs with the cream and add them to the filling. Mix well.
- Spread the mixture on the baked base of the tart.
- Decorate the surface with the cherry tomatoes by lightly pressing them until half submerged in the filling.
- Bake the tart in a preheated oven at 200°C for 30-35 minutes.
- Serve next to a green, fresh salad and a glass of Playia Rosé from Oenou Yi – Ktima Vassiliades for maximum pleasure!
